Ingredients

  • 2 cups freshly grated coconut (alternative: desiccated coconut)

  • 2 tsp chilli powder (adjust to taste)

  • 2 tsp chilli flakes

  • 2 sml shallots, finely chopped (alternative: 2 tbsp equiv. red onion)

  • 1 sml green chilli, finely chopped

  • 2 tsp lime juice (adjust to taste)

  • 0.5 tsp salt (adjust to taste)

  • 2 tsp Optional: Maldive fish chips (available from Indian / Sri Lankan grocery stores)

Directions

  • In a large mixing bowl, add the freshly grated coconut.
    If using desiccated coconut, soak it in a little water to soften it to the wet texture of fresh coconut.
  • Add the chilli powder and chilli flakes.
  • Add the finely chopped onion.
  • Add the salt.
  • Add the lime juice.
  • Using your hand or a spoon, mix all the ingredients thoroughly, ensuring the coconut is evenly coated.
  • Taste and adjust salt and lime juice accordingly.

Notes

  • Pol Sambol is commonly served as an accompaniment to breakfast or a rice and curry.
