Ingredients

  • 1st Marination
  • 3 pc chicken Maryland

  • 1 tsp salt

  • 1 tsp Kashmiri red chilli powder

  • 1 tsp ginger, minced

  • 1 tsp ginger, minced

  • 0.5 lemon, juice

  • 2 tsp vegetable oil

  • Bhuna Besan
  • 1 bay leaves

  • 3 cloves

  • 1 black cardamom pod

  • 1 star anise

  • 2 green cardamom pods

  • 1 tbsp garlic (chopped)

  • 100 g besan (chickpea flour)

  • 2nd Marination
  • 2 tbsp vegetable oil

  • 1 tsp Kashmiri red chilli powder

  • 0.5 cup Greek yoghurt

  • salt to taste

  • 0.5 tsp paprika powder

  • 1 tsp cumin powder

  • 0.25 tsp Kasoori methi (dried fenugreek leaves), crushed

  • 0.5 tsp garam masala

  • 0.5 tsp chaat masala

  • 0.25 tsp black salt

  • 0.25 tbsp garlic

  • 0.25 tbsp ginger

  • 1 tsp bhuna besan

  • 0.5 lemon juice

  • 0.5 egg white

  • optional: pinch of orange red food colour

  • 100 ml vegetable oil

Directions

  • 1st Marination
  • Make deep cuts into chicken maryland.
  • Marinate chicken with above ingredients for 30 minutes.
  • Bhuna Besan
  • Heat Oil in a pan.
  • Add whole spices & finely chopped garlic. Saute garlic till light golden brown.
  • Add besan ka atta and bhuno on low flame for 8 mins or till you get a nice aroma.
  • Cool it & refrigerate in airtight container.
  • Use a 1 tsp of bhuna besan in your tandoori marinations (chicken tikka, tandoori chicken, reshami tikka etc.)
  • 2nd Marination
  • Mix above ingredients to a smooth.
  • Add the chicken and apply the marination in the cuts and marinate it for an hour.
  • Fire up charcoal bbq with a medium heat.
  • Place tandoori chicken on charcoal bbq rack and cook for 20-30 minutes.
  • Baste with butter.
  • Sprinkle chaat masala and lemon juice when done.
