Ingredients
450 fresh mushrooms (cremini or button), sliced
2 tbsp olive oil or butter
1 small onion or shallot, finely chopped
2-3 cloves garlic, minced
120 ml dry white wine (alternative: chicken broth)
240 ml heavy cream
1 tbsp fresh thyme (or 1 teaspoon dried thyme)
Salt and pepper (to taste)
Optional: fresh parsley (for garnish)
Directions
- Sauté the Onions: In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion or shallot and sauté until translucent, about 2-3 minutes.
- Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
- Add Garlic: Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.
- Deglaze with Wine: Pour in the white wine (or chicken broth) and scrape the bottom of the pan to release any browned bits. Let it simmer for about 3-5 minutes until the liquid reduces slightly.
- Incorporate Cream: Lower the heat and stir in the heavy cream. Add the thyme, and let the sauce simmer for another 5-10 minutes, stirring occasionally, until it thickens.
- Season: Taste and season with salt and pepper as needed.
- Serve: Pour the mushroom sauce over your favorite dish and garnish with fresh parsley if desired.
