Ingredients
4 large ripe tomatoes, chopped
1 large lebanese cucumber, sliced
1 red onion, thinly sliced
1 green bell pepper, sliced
200 g Feta cheese, block or crumbled
100 g Kalamata olives, pitted
extra virgin olive oil, for drizzling
red wine vinegar, to taste
dried oregano, to taste
salt, to taste
ground black pepper, to taste
Directions
- Prepare the Vegetables: In a large bowl, combine the chopped tomatoes, cucumber, red onion, and green bell pepper.
- Add Olives and Feta: Gently add the Kalamata olives. If using a block of feta, place it on top of the salad. If you prefer crumbled feta, sprinkle it over the vegetables.
- Dress the Salad: Drizzle generously with extra virgin olive oil. If using, add a splash of red wine vinegar. Season with salt, pepper, and dried oregano to taste.
- Toss Gently: If you have a block of feta, you can leave it whole for serving or break it into chunks. Toss the salad gently to combine the ingredients without mashing the feta.
- Serve: Enjoy immediately as a side dish or light meal. It pairs wonderfully with crusty bread or grilled meats.
