Ingredients

  • 4 large ripe tomatoes, chopped

  • 1 large lebanese cucumber, sliced

  • 1 red onion, thinly sliced

  • 1 green bell pepper, sliced

  • 200 g Feta cheese, block or crumbled

  • 100 g Kalamata olives, pitted

  • extra virgin olive oil, for drizzling

  • red wine vinegar, to taste

  • dried oregano, to taste

  • salt, to taste

  • ground black pepper, to taste

Directions

  • Prepare the Vegetables: In a large bowl, combine the chopped tomatoes, cucumber, red onion, and green bell pepper.
  • Add Olives and Feta: Gently add the Kalamata olives. If using a block of feta, place it on top of the salad. If you prefer crumbled feta, sprinkle it over the vegetables.
  • Dress the Salad: Drizzle generously with extra virgin olive oil. If using, add a splash of red wine vinegar. Season with salt, pepper, and dried oregano to taste.
  • Toss Gently: If you have a block of feta, you can leave it whole for serving or break it into chunks. Toss the salad gently to combine the ingredients without mashing the feta.
  • Serve: Enjoy immediately as a side dish or light meal. It pairs wonderfully with crusty bread or grilled meats.
