Ingredients
- Salad
1 Large Head of Romaine Lettuce (washed and torn into bite-sized pieces)
1 cup Croutons (store-bought or homemade)
0.5 cup Freshly Grated Parmesan Cheese
- Dressing
0.5 tsp Garlic (minced)
2 Anchovy Fillets (minced)
1 tbsp Dijon Mustard
1 tbsp Worcestershire Sauce
1 tbsp Red Wine Vinegar
1 tbsp Lemon Juice
2 tbsp Mayonnaise
0.5 cup Extra Virgin Olive Oil
Salt (to taste)
Ground Black Pepper (to taste)
Directions
- In a bowl, combine the minced garlic and anchovies, mashing them together with a fork to form a paste.
- Add the Dijon mustard, Worcestershire sauce, red wine vinegar, lemon juice, and egg yolk (or mayonnaise). Whisk until smooth.
- Gradually whisk in the olive oil until the dressing is emulsified. Season with salt and pepper to taste.
- In a large salad bowl, add the torn romaine lettuce.
- Drizzle the dressing over the lettuce and toss gently to coat.
- Add the croutons and sprinkle the grated Parmesan cheese over the top. Toss lightly again.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
- Tips:
Homemade Croutons: For homemade croutons, cube day-old bread, toss with olive oil, garlic powder, salt, and bake at 375°F (190°C) until golden.
Egg Safety: If you’re concerned about using raw egg, you can substitute with mayonnaise or pasteurized egg yolks.
Customization: Feel free to add grilled chicken, shrimp, or bacon for extra protein.
