Ingredients

  • Salad
  • 1 Large Head of Romaine Lettuce (washed and torn into bite-sized pieces)

  • 1 cup Croutons (store-bought or homemade)

  • 0.5 cup Freshly Grated Parmesan Cheese

  • Dressing
  • 0.5 tsp Garlic (minced)

  • 2 Anchovy Fillets (minced)

  • 1 tbsp Dijon Mustard

  • 1 tbsp Worcestershire Sauce

  • 1 tbsp Red Wine Vinegar

  • 1 tbsp Lemon Juice

  • 2 tbsp Mayonnaise

  • 0.5 cup Extra Virgin Olive Oil

  • Salt (to taste)

  • Ground Black Pepper (to taste)

Directions

  • In a bowl, combine the minced garlic and anchovies, mashing them together with a fork to form a paste.
  • Add the Dijon mustard, Worcestershire sauce, red wine vinegar, lemon juice, and egg yolk (or mayonnaise). Whisk until smooth.
  • Gradually whisk in the olive oil until the dressing is emulsified. Season with salt and pepper to taste.
  • In a large salad bowl, add the torn romaine lettuce.
  • Drizzle the dressing over the lettuce and toss gently to coat.
  • Add the croutons and sprinkle the grated Parmesan cheese over the top. Toss lightly again.
  • Serve immediately, garnished with extra Parmesan if desired.

Notes

  • Tips:
    Homemade Croutons: For homemade croutons, cube day-old bread, toss with olive oil, garlic powder, salt, and bake at 375°F (190°C) until golden.
    Egg Safety: If you’re concerned about using raw egg, you can substitute with mayonnaise or pasteurized egg yolks.
    Customization: Feel free to add grilled chicken, shrimp, or bacon for extra protein.
